Roast Pumpkin Risotto with Crispy Sage and Freshly Grated Parmesan

This is one of my all time favourite pumpkin recipes. You can use various types of squash or pumkin but avoid the ones with stringy flesh. I always find that butternut squash works particularly well and the crispy edible sage garnish works beautifully with the sweetness of the squash.
